Here are 3 Easy Recipes for Lunch or Dinner tomorrow!!

 

1. Taco Salad Dressing

2. Quick Wild -Life Fish Dinner 

3. EZ Marinade for Grilled Flank Steak, Chicken, or Tofu

 

1. Taco Salad Dressing

Ingredients:

2 tbsp Mojo’s Going Green sauce
¼ cup  buttermilk
½ cup olive oil 
1 garlic clove (chopped or smashed)
1 tsp dried cilantro leaf
¼ cup cotija cheese or grated parmesan 
2 egg yolks  

 

To Make the Taco Salad Dressing:

  • In a food processor combine the garlic and egg yolks and blend until the yolk has a shine on the surface and the garlic is well incorporated.  
  • With the food processor running:
  •  slowly add in the Mojo’s Going Green sauce
  • Drizzle the olive oil in slowly, allowing it to mix fully if the oil appears to be separate. 
  • Transfer to mixing bowl and fold in buttermilk 
  • Add in cheese and cilantro leaf 
  • Can be served right away or stored as a salad dressing in the fridge. 

As a Meal:

  • Make the dressing the night before and store in small dressing containers.
  • Make a layered Taco Salad in a reusable container with greens, cheese, jalapenos, tomatoes, avocado, Black Beans, and leftover chicken tossed with a pinch or two of Mojos Chili Seasoning. 
  • Pack for a Quick Ready- to- Grab or To-Go Lunch!

 

 

2. Quick Wild-Life Fish Dinner

Ingredients:

3T. Mojos Wild Life Hot Sauce
2T. Butter
I whole Trout or side of fish enough for 2 people2 Scallions- roughly chopped
Bok Choy- roughly chopped 
1 Lemon- sliced

 

To Make the Fish

  • Whip together Butter and 1.5T Wild Life Hot Sauce
  • Clean and dry the Fish and rub with remaining Wild Life Sauce
  • Place 1/2 Bok Choy and Scallion pieces on butcher paper
  • Top with fish. If whole fish place 1/2 butter and 3-4 slices lemon inside
  • Add remaining vegetables. Top with remaining Butter.
  • Fold paper secure in a seam along top and at sides. 
  • Bake in a 325 degree oven for about 20 minutes- 1/2 hour (This will depend on the size of your fish)
  • (If you're in a rush and just want to grill or pan-fry a single piece of fish just smear each piece with Wild Life Hot Sauce straight from the bottle cook til done)

As a Meal:

  • Remove Fish and Veggies
  • Serve over Steamed Rice

 

3. EZ Marinade for Grilled Flank Steak, Chicken, or Tofu

Ingredients:

2T. Mojos Going Green Hot Sauce
2T. Olive Oil

 

To Make the Marinade:

  • Whisk together the ingredients and pour over raw meat (whole or in strips)
  • Let sit in the fridge (turn or shake once in a while) for at least 1 hour or while your at work
  • If your using Tofu I suggest freezing, then thaw and lightly squeeze out excess water. Cut into (large-ish) strips or cubes. This will not need more than 15 minutes of marinating. Then bake on oiled sheet or toss with cornstarch and fry.

As a Meal:

  • Throw your meat on the Grill or in a frying Pan along with remaining marinade
  • This is a great way to prepare a meat and potatoes meal with a salad, or a great start for your Burritos, Fajitas, or Quesadillas.
