Sauce Tasting 101

                              
When Mojo’s is at the Farmers Market we have a tasting chart that describes each of our sauces, their heat levels, and flavors. We have the opportunity to talk about what foods each of the sauces compliments and how to use them in some basic cooking applications.
Often, our customers have requested that we find a way to put some of this great information online for their friends and family who can’t make it to the market.
In this post I would like to start that conversation!

I'll Start at the Top with the Hottest Sauce and work Our way down to the mildest!

Spooky Pumpkin


                                               
Heat Level: Very Hot!
Sauce Description: Sunshine Kobocha Pumpkins roasted with curry spices are blended with Mojo's Pickle Pepper Blend and Ghost Chilies.

Ingredient List: Sunshine Kabocha pumpkin, Mojo's Pickled hot peppers (Ghost chilies, Hungarian, Jalapeño) and Brine (Vinegar, water, salt, sugar, spices, shallots, garlic) citric acid, and Curry. 

Serve With: This sauce is great with Roasted Pork, Bean dishes and Eggs. 

 

Smokin' Hot Heirloom 

                                              

Heat Level: Hot   

Description: This sauce is a blend of locally grown Heirloom and Plum Tomatoes smoked for 12 hours before being blended with local fresh, house-smoked Habanero peppers, Roasted Red Peppers, and our special Mojos Pickled Pepper blend to create a new take on a traditional style hot sauce. 

Ingredient List:  Smoked Heirloom and Plum Tomatoes, Grilled Red Peppers, Mojo's Pickled Peppers (smoked Habanero’s, Hungarian, Jalapeño) and Brine (Vinegar, water, salt, sugar, spices, shallots, garlic) citric acid, & Garlic

Serve With: Nachos & all your favorite Tex-Mex foods, Chili, Pizza, and as a great addition to a Bloody Mary!

Sunshine Carrot 

                                                  

 

Heat Level: Medium

Description: The tropical fruit flavors of Scotch Bonnet Peppers blend with Ginger, Lemongrass, and Carrots to create a sauce that is like sunshine in a bottle.

Ingredient List: Roasted Carrots, Mojo's Pickled Peppers (Scotch Bonnet, Hungarian, Jalapeno), and Brine (vinegar, water, salt, sugar, spices, shallots, garlic), Lemongrass juice, Ginger juice, citric acid

Tastes great with:  Fish tacos, Breakfast Sandwiches, as a marinade for Chicken or Tofu, and Stir-Fry.

 

Beets Me! 

                                                  

Heat Level: Medium 

Description: This vibrant magenta sauce combines the earthy flavor of Beets with the fresh brightness of Ginger, Cayenne Peppers, and Parsley. 

Ingredient List:  Beets, Mojo's Pickled Peppers (Green Cayenne, Hungarian, Jalapeno), and Brine (vinegar, water, salt, sugar, spices, shallots, garlic), Parsley juice, Ginger juice, citric acid

Serve With: This sauce is a great accompaniment to roasted vegetables dishes and potatoes of all kinds (I'm looking at you French Fries!), on Burgers (Veggie or traditional), or as an addition to a savory cocktail.

       

3C's 

                                                

Heat Level: Medium

Description: The classic combination of Dark Chocolate, Coffee, and Chipotle make this sweet and spicy sauce reminiscent of mole. 

Ingredient List: Sweet Potatoes, Mojo’s Pickled Peppers (Hungarian, Jalapeno), and Brine (vinegar, salt, sugar, shallot, garlic, spices,)  Dark Chocolate, Copper Horse Roasters 'Warhorse' Coffee, citric acid, spices (including dried Chipotle and Ancho Pepper)

Serve With: Its great as a marinade for Chicken and Pork, or in Chili

 Going Green

                                                  

Heat Level: Mild

Description: This Salsa-verde style sauce combines Tomatillos, Grilled Poblanos, Mojo's Special Pickled Pepper Blend, Cilantro, Lime, and a hint of Cumin.

Ingredient List: Mojos Pickled Pepper Brine (vinegar, salt, sugar, shallot, garlic, spices,) Tomatillos, water, Grilled Poblano Peppers, Mojo’s pickled peppers blend (Hungarian, Jalapeno, Serrano), Cilantro juice, Organic Lime juice, citric acid, salt, Cumin

Tastes Great with: Combine this sauce with a little olive oil as a marinade for Grilled Flank Steak, or mix in equal proportions with Sour Cream for a creamy-licious dressing for Taco Salads. Also a great finishing sauce for Quesadillas, and  Veggie Paninis. 

 

Into the Blue

                                                  

Heat level: Medium 

Ingredient List: Blueberries, Mojo’s Pickled Peppers (Hungarian, Jalapeno), and Brine (vinegar, salt, sugar, shallot, garlic, spices) Honey, Organic Lemon Juice, citric acid, Thyme & Nutmeg

Description: If you could bottle Summer this would be it. Organic Blueberries from Hillberry Farm are blended with Mojo's Special Pickled Pepper Blend, Thyme, Nutmeg, and Lemon to create a sauce that lifts you up into the blue sky of Summer.

Tastes great with:  Roasted lamb, Venison or Poultry, on a Turkey Club Sandwich, or sprinkle on top of garden salads with a little olive oil for a refreshing dressing! 

 

 Wild Life

                                                   

Heat level: Mild

Description: This limited-edition sauce is a great way to kick off Spring and early Summer. Cultivated Wild Garlic (aka: Ramps) and Spring Onions are blended with the fresh flavors of Lemon, Parsley, and Mojo's Special Pickled Peppers  to create this one of a kind sauce.

Ingredient List:  Spring onions, Ramps, Mojos Pickled Peppers (Hungarian, Jalapeno) and Brine (vinegar, salt, sugar, shallot, garlic, spices,)  Parsley Juice, Organic Lemon Juice, citric acid 

Serve With: This is a wonderful sauce on Broiled Trout or Haddock, grilled Asparagus, or in Quiche. It also makes a great dressing for a quick fresh vegetable salad with Chopped Tomatoes, Cucumbers, or Corn.  

 

Harvest Pumpkin

                                               

 

Heat Level: Mild

Description: This is a milder version of our Spooky Pumpkin Hot Sauce. It has all the unique flavors of the original but without the heat of ghost chilies.

Ingredient List: Sunshine Kabocha pumpkin, Mojo's Pickled hot peppers (Hungarian, Jalapeño) and Brine (Vinegar, water, salt, sugar, spices, shallots, garlic) citric acid, and curry. 

Serve With: This sauce is great on Eggs, Deli or Breakfast Sandwiches, or toss with olive oil and Cauliflower and roast in the oven for a quick and tasty side dish!
