Spooky Hot Chicken Wings

Ingredients:

24 Chicken wings 

5 tbsp Mojo’s Spooky Pumpkin hot sauce 

6 tbsp butter 

1 tbsp oil 

1/4tsp paprika 

1/4tsp garlic powder 

1 tbsp salt 

 

Directions:

For Wings:  Defrost (if frozen) and remove excess water by blotting with a paper towel.

Toss raw wings in oil, paprika, garlic powder and salt 

Bake at 425 for 40 minutes (we suggest placing a wire rack on a sheet pan so the fats can drain off the wings) for crispier wings, broil for last 5-8 minutes 

If using an Air Fryer, cook for 35 minutes

For Sauce:  Melt butter in saucepan or in a microwave safe dish.  Do not overheat, set aside to cool 

When butter is cooler, but still liquid, add 1 tbsp of sauce at a time, whisking until smooth after each addition until all the sauce is added

To Serve:

Toss cooked wings in sauce and enjoy with friends!

A little More Info:
Chicken Wings may have been invented in France- But they were Perfected in Buffalo NY! These delicious Snacks are enjoyed World-wide as a staple on the menu of millions of Restaurants and Bars. Flavors are varied, (as are the Hotly contested Opinions on ALL of them!) often defined by regional tastes and almost always by a Fierce Passion.  
For the Brave Souls in the World that enjoy a Variety of Flavors- that look to pair Seasonality with their Snacks, Mojo’s sauces make Vibrant, Spicy Wings that represent the Diversity of Flavors and Spirit of the Finger Lakes. 
 
When making this recipe: Start with thawed wings, (don’t be impatient and try to cook frozen wings! Poultry products are packed with Extra Water and that moisture Needs to be Removed to get Crispy, Great Tasting Wings! For this reason- Thaw, and then draining any extra moisture off of the wings (pat them with a paper towel) before seasoning and cooking.  
In a bowl, combine the oil, Garlic powder, Paprika and salt and toss in the Wings!  (If you have dried your wings properly, the spices will stick to the wings nicely.  If not, it won't stick, and your wings will lack flavor and be less crispy; and your family and friends may judge you harshly.)
Cooking the wings can be done in a variety of ways. Deep frying would take off the seasoning for this recipe, so we are not going to explore that option here.  Baking and Air Frying are the methods we Like Best, and both make very Tasty, Crisp Wings.  Make sure you have a good size baking sheet- don't crowd them -they need some space around each other so they can sweat, and the Heat can Crisp up the Skins.  Additionally, - cook the wings on a wire rack- so the wings do not sit in a puddle of water/fat while they cook- Seriously, it makes a huge difference!  
Preheat the oven to 425, before baking! For oven baking, make the time to Turn each of the Wings to Ensure Even Cooking.  For Air Frying, this is when you would transfer the wings to the wire rack in the Air Fryer.  For each method another 15-20 of cooking will be necessary.  Crispier wings will want to cook longer, and juicy wings will want a slightly shorter cooking time.  It can be difficult to get a good reading with a Thermometer in Wings, so we just cut open one of the larger wings and make sure the meat is cooked all the way through before removing from the heat. (Chef's Bonus!)
While the Wings cook, make the Mojo’s Wing Sauce.  Melt the butter until it is JUST MELTED into a liquid -be careful not to Overheat and Separate the Oils in the Butter.  Add your Mojo’s hot sauce 1T. at a time, Whisking the Sauce Smooth between each addition. After all the Hot Sauce is added, allow the mixture to Cool.  (If the sauce looks "broken"- meaning that the oils have separated from the solids it may be necessary to add another tablespoon of hot sauce or chill the sauce in the fridge for five minutes-them whisk it again)
When the wings are ready to come out of the Oven or the Air Fryer.  They smell GREAT!! And are Sizzling Hot! Toss the Wings in the Sauce and serve Immediately- or keep the wings extra crispy and serve the Sauce on the side!  Follow your heart on this difficult decision, or please everyone by serving some tossed and some crispy.  
Wings should have some sides and sauce options:  Celery, Carrots, Blue Cheese, Escabeche, & Kimchi are all Great ways to Dress up a Platter of Wings!

    We love your hot sauces, especially, the Harvest Pumpkin and Smokin’ Hot!!
    They have become our “go to” hot sauces on everything! We add them to eggs, to arroz con pollo y habichuelas, pizza, grilled meat, pulled pork… you name it.
    The mark of a good hot sauce is not just the appropriate level of heat, but, also that they enhance the flavor of the food, which Mojo sauces do very well.
