Cheesy Corn Dip with Bacon

 

Ingredients:


8 slices of bacon cut into small pieces 

1# frozen or fresh corn 

7oz can of green chilis 

12oz cream cheese 

4oz grated cheddar 

4tbsp Going Green sauce 

Process: 

Cook bacon in a large frying pan until golden brown

Remove bacon from pan, reserve the oil in the pan 

Add corn to pan and fry on medium heat until corn starts to brown 

Add chilis and bacon bits and fry for two to three more minutes 

Remove from heat 

In a mixing bowl place cheddar and cream cheese, saving a small amount of cheddar for later

Add Corn, chili and bacon mix to cheeses and mix well

Spoon into oven safe dishes, top with remaining cheddar cheese and bake at 450 (or broil) for 4-5 minutes

Maque Choux is a Cajun dish, of stewed Corn, with Cream, or Cheese, and spices to perfection!  Mojo’s Cheesy Corn Dip with Bacon is our take on the classic side dish, which can be easily served as part of an Elaborate Dinner, or on the Coffee Table for Light Snacking.  
Start off by cutting the Bacon into small bits and Sauté them over Medium Heat.  (Try not to eat all of the bacon bits before you finish the dish- If you don’t have the willpower for this, think about adding a strip or two of bacon so you still have some bits left when it is time to add them back into the mixture. You may also want to keep a wooden spoon handy to defend the cooked bacon bits from familial predators, who will almost certainly attempt to eat all of the bacon bits while you are cooking.)  When the bacon bits are cooked to your preferred level of crispy, remove to a plate lined with a paper towel to cool, reserving the bacon fat in the pan.  
Turn the Heat up to Medium-High and allow the pan to get Hot enough to Just Start Smoking the Bacon fat.  Add the Corn and stir well. (The corn takes a while to cook before it browns, so don’t over stir the corn while cooking-Frozen corn will take longer to cook than fresh corn.) When the corn has started browning on the edges, but is still plump, add in the green chilis (make sure they have been well drained) and the Bacon Bits and Cook for 2 minutes.  
Preheat the oven to 450 degrees.  While the Corn Mixture simmers, combine the Cream Cheese, shredded Cheddar, and Going Green Hot Sauce together in a mixing bowl. Remember to save a small amount of the Cheddar Cheese to garnish with later. (The same rules for defending bacon bits apply to grated cheddar; having a bit extra is always a good idea.) When the Corn Mix is cooked, combine it with the Cheese Mix and spoon into Oven-Safe Dishes.  Cover with the remaining grated Cheddar cheese and cook for 4-5 minutes or until the cheese is Melted and starting to brown.  
Serve this dish Hot, Warm, or even Chilled.  It is versatile and can be stored in the fridge for a few days - if your willpower holds!
