12oz Pork Cutlets – cut into strips (or use Boneless skinless Chicken Breasts, or marinated Tofu)
1can Black Beans- Drained and rinsed
1 Portabella Mushroom- thinly sliced
1 Red, Yellow, or Orange Pepper – sliced
1 Onion- Sliced
1box Baby Spicy Greens (Kale, Arugula, Chard, Spinach) or ½ bunch Kale or Chard -shredded
½ package Taco Seasoning
1 package Fajita style tortillas
Garnish With: Shredded Cheese, Salsa, Mojo’s Hot Sauce, Sour Cream, Jalapenos, Avocado
Sauté meat until cooked and add taco seasoning. Add beans and heat through.
In separate pan, sauté veggies in small amount of olive oil over med-high heat until browned and cooked through. (This can also be done on a sheet pan under the broiler of your oven!)
Warm Tortillas in a slightly damp clean kitchen towel in microwave (rotate the stack after each 30 seconds until they are warm) or in a clean pan with rubbed with olive oil on stovetop.
Assemble your fajitas with all your favorite toppings and garnishes!
