Buffalo Chicken Dip

 

Ingredients: 


3c Cooked Shredded Chicken 

8oz cream cheese 

1/2c Mojo's Smokin' Hot Heirloom Hot Sauce

1/2c Sour Cream 

1/2c Blue Cheese 

1/2c grated Cheddar 

1/4tsp ground black pepper 

 

Process:

Place shredded chicken, hot sauce and black pepper in 2qt saucepan and cook over medium heat 

Add sour cream and cream cheese and cook until well incorporated 

Remove from heat and add cheddar and half of the blue cheese, mix well 

Put in oven safe dish, top with remainder of blue cheese and put in 450 oven for 6-8 minutes

This is the dish that is Great for Superbowl Parties or a Holiday Get-Together!  It is creamy, cheesy, spicy and quick to make!  The easiest way to start this recipe is to have some precooked chicken on hand- that will reduce the prep time! In a pinch you can buy a rotisserie chicken from a grocery store, or if you are a purist, head out and pick up a nice organic, pasture raised, cruelty free chicken, and roast it the day before you plan to make this dip recipe.  I do not suggest cooking the chicken right before making the dip; it is much easier to have the chicken cooked and cooled in advance.  (Take it from us, shredding hot chicken is messy and you can burn yourself.) 
Preheat the oven to 450.  Measure out all of the ingredients first, this includes shredding the chicken and grating the cheese.  Place the chicken, black pepper and hot sauce in a pot on medium heat and cook until it is sizzling nicely.  You don’t need to cook it too much, but the dip does taste a bit differently if you cook the chicken, pepper and hot sauce together, rather than just combining all the ingredients and putting it in the oven.  
Reduce the heat to low and add the sour cream and cream cheese to the chicken mix and heat/stir until it is well incorporated.  Don’t have the temperature on the stove too high at this stage, because if this mix gets hot enough to boil it will send small droplets of LAVA shooting into the air and will scorch the bottom of your pot.  
In a mixing bowl, combine the cheddar and half of the blue cheese.  Pour the hot chicken mix over the cheese and fold together.  Transfer into an oven safe dish or pan, filling it to just below the rim, and top with the remaining blue cheese crumbles.  Place this dish in the oven and bake for 6-8 minutes or until the blue cheese is nice and brown.  
This dip can be served right away or chilled for later use. Happy Dipping!
